I bought a small amount of sourdough start from Breadtopia about 3 years ago. I'm proud to say it's still alive, however, I don't get the intense bubbling and increase in volume when feeding anymore.
It seems rather flat.
Over the years, I do admit to neglecting it at times (it's kept in the refrigerator), but I've read that you can forget about it for weeks and just begin feeding to revive it.
My question is- does older starter loose it's "oomph"?. I've been feeding it 2-3 times a week recently, but it's hardly bubbling. It also gets that brownish fluid on top much quicker, which I pour of.
BTW, it smells wonderfully sour and intense in a good way.
