Source for firm Italian-style ricotta?

dixieday | Nov 10, 2004 09:38 AM

Does anyone know of a cheese shop in Manhattan/Brooklyn that sells really firm, Italian-style ricotta cheese? NOT ricotta salata, but fresh ricotta that's dense enough to slice. In Italy, ricotta is displayed as a big "cake" and sliced to order--not all wet and smooshy in tubs. I want to make my favorite ricotta gnocchi recipe (from the Zuni Cafe Cookbook), but I know it only works with very firm ricotta (I used to use Bellwether Farms' fresh ricotta when I lived in San Francisco). Any help? Thanks!
