Soup Beautiful Soup!

No photo this time. It looks like Cream of Tomato Soup.

I had 7 ripe tomatoes sitting on my kitchen sounter this afternoon and thought, tonight we are supposed to have another cold front push in, tomato soup would be good for lunch tomorrow. This could not be easier and I just made it up as I went along.

4 Tbs. unsalted butter
1 lg-ish onion chopped
6-7 ripe tomatoes, chopped, leave the skins on
2-3 Tbs. tomato paste
pinch of dried thyme
2 Tbs.flour dissolved in
2 1/2 C. chicken broth
heavy cream
salt and freshly ground white pepper to taste
sugar if needed

Melt the butter in a 4 qt. sauce pan and add the onion. When the onion has softened and turned translucent add the chopped tomatoes and the paste. Cook for about 10 minutes breaking up the tomatoes as they cook. Add the thyme and salt and pepper. Mix the flour and Chicken broth and stir into the soup. Go out side and play with the dogs for a bit while everything simmers 10-15 minutes. When it is time for the dogs to come in for a drink of water go back to the soup. Remove from heat and pass through a food mill into a large bowl. If you do not have a food mill you can puree it in a food processor or blender and then strain. Put it back in the pot that you have rinsed out to remove any stray bits of tomato skin or onion and add the cream. I added about 1/2 C. then stir and taste to see if it needs sugar. I added about 1 tsp. this afternoon. It just reduces the acidity a bit and mellows the soup. It tastes like summer in a bowl! Now the garnish......crisp bacon a la BLTs? Ot maybe a chiffonade of fresh basil? Oh that stuff is smelling good. We may have it tonight, I'm not sure I want to wait for tomorrow.

If you don't have dogs, well I feel for you, you will just have to find something else to do while the soup simmers.
