Thx to JudiAU's tip for soft shell crabs avail at Fish King in Glendale (CA), we grabbed a couple over the w/end and made delicious sandwiches for brunch on sunday. just dusted the crabs w/ flour and pan fried them in butter / oil (had them cleaned where we bought them). actually, husband did all the cooking -- he is a wizard w/ seafood of all types. had them on toast w/ avocado and a chipotle mayo spread. sounds like it might overpower the crab, but it was lightly applied and the crabs were plump and perfect, so the whole thing came together beautifully. Mmmmmmm. so simple. guess there is just about 1 more wk left in the season......it's nice to have a treat like that, that is shortlived and thus more special.
