I'm buying a meat slicer from Amazon and would like to know if there is such a thing as "not quite" freezing meats so that they last longer but will also slice on a consumer grade slicer? I also want them to last as long as possible but not get completely frozen. I'm assuming (totally) that keeping hams, roast beef, etc whole in a freezer set at, say, 35 degrees would maximize their shelf life and at the same time provide a semi-frozen block which the slicer prefers over refrigerated meat.
