We have been enjoying fresh, wild caught king salmon for a couple of months now. However, today Whole Foods had fresh, wild caught sockeye. I definitely prefer it to king.
First of all, the deep salmon color is beautifully intense and dark, making the fillet quite attractive. But, best of all, the flavor is excellent and rather different than the king. I can't quite put my finger on what was different about the sockeye. It had a definite, stronger, straight forward salmon flavor, and was less sweet than king. Perhaps it could be described as having an undertone of earthiness, as opposed to the mild fish flavor of the king.
