Smoking on gas grill

What is the best way to add smoke to whatever I'm cooking on my gas grill. I have the foil pan with hickory or mesquite chips, but where do I put them, and do I change the temp I'm cooking the chicken or fish I'm grilling?

I've looked online and just can't find any simple explanations for a dummy like me. I'm not talking about cooking a big brisket or ribs for 20, I'm just looking at adding a nice smoke flavor to some chicken thighs or maybe a piece of salmon.
