I defrosted one of my pork butts about 3 days ago. I'll admit I was too lazy to worry about the smoker so I ignored it.
On top of that, I fully loaded the tray with chunks of hickory; which isn't my favorite for smoking. And then I loaded it again. In my defense the chunks are the size of a 5 yr old's fist, if that big.
I admitted I was lazy, so I didn't even start the business until 4:30 pm. May have to pull it and finish in the oven. No biggie.
Not asking for help for over smoked butt.
Asking for someone to say been there done that! Who knows it could be the best butt I've ever done.
I have some different ideas for spicing and sauce, which I'm going to use since this butt is full size.
