Smithfield Hickory Smoked Sliced Pork Jowl Bacon

Visiting Palm Springs last month, I stopped at the Stater Brothers market in TwentyNine Palms on the way back from Joshua Tree to pick up some groceries. Intending to buy salt pork, I spotted Smithfield Hickory Smoked Pork Jowl Bacon, labeled as sliced, skinless and fully cooked on the shelf and gave it a try instead. I was interested in it because this is essentially a smoked version of guanciale, an Italian cured pork product that sells for many times more than this $3.60 per pound asking price. The firmer, sweeter fat from the pork jowl is also prized for making salame.

As you can see, the slices are mostly fat. For a quick flavor profile taste test, I microwaved that piece to illustrate the level of shrinkage. I was sort of surprised since this is a fully cooked product and presumably some of the fat had already been rendered. Once cooked down, it was quite salty and seemed sweeter to me than the typical commercial bacon. The smoke notes were well integrated and I liked the firm texture of the fat. The sweetness worked well for the Chinese rice dish that I was making, as Chinese bacon that has a sweet cure was not available in the area.

Now home again, I've tried to find it locally. The Smithfield shop on Amazon is sold out. Walmart (and most stores are out of stock) seems to be the one outlet currently.
