I want to make a slow roasted pork shoulder this weekend--

I'm not sure which recipe to use. Nigella Lawson has a 24 hour recipe, but I am worried the meat might dry out. Rogers and Grey's recipe says to cook for 10 to 24 hours- a little imprecise for me!
