Slow Cooker- Can you throw veggies in later?

I use my slow cooker a bit but have recently gotten a bit tired of all the food in it having the same consistency. For example, I like the idea of the veggies cooking in the juices but wish they were more crunchy or al dente. Has anyone used a slow cooker and cooked 'in stages', where after several hours of cooking meat you throw in the veggies to cook the last 2 hours or so and, if so, how'd that turn out?
