Does anyone slice smoked Nova Scotia salmon by hand in South Bay???

Ages ago, when I lived in NYC, I used to get paper-thin slices of Nova at Zabars. The guys behind the counter were really skilled. Does anyone do that in the South Bay? Or anywhere on the Peninsula. We're new in town...HELP!
