Size / texture

I recently made 2 of my favorite dishes and, for some reason, they didn't come out as good as they always do. The dishes are lamb curry and chili verde. Is it possible I cut the lamb and pork too small so that, when browned, they were over cooked and tough? Should I have left the meat a little chunkier?
