I just got the Kitchenaid meat grinder attachment and have made homemade sausage for the first time. I am shocked at how little fat cooked off from what I worried would be meat with too much fat. (This makes me swear never to buy fresh pork sausage again.)
The one problem I had was that sinews in the meat clogged the grinder plate.
Easy solution is to remove it and clear the problem in the middle of grinding.
Is there a better solution, short of de-sinewing the meat before it gets chopped to go in?
