Hi Fellow 'hounds,
DD and I will be helping a friend of DD cook a simple meal for friends next week. The friend is a young professional with a new baby and a new house. She works full time. She has some basic cooking skills and wants to learn to cook more things.
My goal is to help her prepare a very simple menu for entertaining that she could make by herself in the future.
We don't eat a lot of meat and poultry, but the friend does. I am thinking about this menu, and I'd love your comments:
**good quality chicken cut into pieces and roasted (I will tell her that this can be varied with different seasonings)
**salad with nice greens, fruit, toasted nuts, and perhaps some cheese with homemade simple vinaigrette
**if the roast chicken dish doesn't include a starch, then we'll make a starch---potatoes? sweet potatoes? polenta? rice?
**dessert---perhaps a tart with a press in crust and lemon curd filling...
**popovers---they are dead simple and when you make them, people think you are Martha Stewart :0)
If this is the menu we actually decide to make, I would love to get your suggestions for a roasted chicken dish. I am an Eat Your Books subscriber, and I have a bazillion cookbooks, but I am pressed for time and looking for you guys to point me to recipes you have used and loved for roasted chicken pieces. Bonus points if the roasted chicken dish includes a starch like potatoes :0)
