Simple ideas to make the most of summer produce?

Hi! I'm sure this topic has been much discussed but I have been away from the boards for years and may be rusty at how to best search. Feel free to point me in the right direction of threads & recipes.

I live in NYC but this time of year I'm a proud Jersey girl and I scour the local markets that carry Garden State produce for tomatoes, corn, peaches and blueberries in particular (but also keeping eggplant, summer squash and cucumbers on hand and we grow herbs). I'm in a rut veg-preparing wise. My go-tos are: for salad, Israeli/Middle Eastern style or a black bean/corn/tomato/pepper salad. Both are big hits but looking for more fresh ideas. For grilling zucchini and such, I am using s/p/evoo/Adobo. Having a toddler and a FT job and other hobby obsessions, I am taking more shortcuts these days so I'm not looking for ingredient or labor intensive but really either some quick tips of how to make grilled veg more delicious or some new salad ideas. Other ideas like ratatouille and gazpacho are welcome too! My SO just told me he loves gazpacho and I've only made it once from a David Rosengarten recipe so I'm a bit lost there too.

TIA for some desperately needed inspiration. PS my toddler won't eat anything that's not plain and dipped in ketchup so she is not a consideration, this is adults-only food. I have inducted her into the NJ produce cult though and we split a peach 2x daily while I make her repeat "Jersey peaches are the best"...
