Hi y'all. I have gotten so much good advice and recipes from all of you that I wanted to share one of mine. I recently had a case of munchies, something along the line of salad, but didn't have the makings. I went through my pantry and decided on a can of black beans, a can of garbanzos and a jar of home canned pickled beets with sliced red onion. I opened both cans, tossed the contents in a strainer and rinsed them well, then into a bowl, followed by the pickled beets (drained and cut into bite size), a little S&P and a drizzle of Vidalia onion vinegrette. I mixed it well and put it in the fridge for an hour or two. OMG!! It was sooooo good!! Maybe I felt deprived, but I've made and eaten 2 full bowls of it. Just thought I'd share.
