Silly question about oysters

I know this is going to sound silly, but goes!

I've only had oysters once in my life (as part of a salad - they were fried), but clearly part of the New Orleans experience is grabbing an oyster po'boy at Acme's, Casamento's, etc......I've always thought of oysters as being rather slimy, but perhaps that's just the raw version. I consider myself a somewhat adventurous eater - as an oyster newbie, should I just grab a po'boy and enjoy? I'm not sure if I should stick to what I know I like (such as shrimp), which though good, would be the conservative thing to do.

Also - how exactly do you eat a crawfish? When it's served in a dish such as etouffe, is it already out of it's shell, or do you have to squeeze it's tail and head (not looking forward to that, but I've gotta have them)?
