I bought a kilo of large shrimp today, and just removed the heads of a dozen of them. Every one had a bit of orange gunk between the head and the body. I rinsed it off, and it's down the drain. I have never seen this before, and at first was worried that there was something wrong. Now, I think maybe it's roe, and a good thing! I have lots more shrimp in the fridge, and they all seem to have that orange stuff. Is it ok? Why have I never seen it before? What do you do with it?
