Sharpening Stones

Curtis | Mar 12, 2006 12:40 AM

Well, I went ahead and bought myself one of those Japanese Damascus-style knives and realized that the time had come for me to start learning how to sharpen my knives. In the meantime, I can also use the sharpening tools to sharpen my Wusthof knives as well.

So, I've been doing some basic reading up on sharpening knives and various sharpening tools and decided it would be best if I either got a set of those rectangular stones. Now, I've also noticed that the stones come in several materials (stone, ceramic, diamond bits) and grain counts made by several (many) companies.

In the end, my question is does anyone have experience or knowledge in how the different materials affects the knife sharpening process and which companies make good quality sharpening stones.
