Servings ice pops at a bbq

Doing a medium sized (20-30 people) BBQ in June and for dessert we are going to do s'mores in our fire pit, but I also had a desire to make ice pops (so inspired by smitten kitchen's Popsicles).but not sure the best way to do it logistically. Should I put them in little plastic bags, and seve on ice? Make everyone pull from the freezer? Anyone ever serve ice pops without it becoming a drippy mess?
