What to serve with Chicken Marbella?

I'm planning on serving Chicken Marbella (chicken marinated in red wine vinegar, brown sugar, garlic, bay leaves, oregano, capers, olives and prunes) from the Silver Palate cookbook tomorrow -- say what you will about the authors' occasional descent into preciousness, the dish is an old favorite ... but I've never been really satisfied with the accompaniments I've traditionally chosen -- either orzo or rice, plain and unadulterated.

Does anyone have the side dish of my dreams? Is it a matter of doctoring up the aforementioned items, or should I branch out into the potato kingdom, or be radical and avoid starches altogether?

All suggestions welcome ...
