Need a Semolina Education

zackly | Mar 11, 201605:14 AM     8

Yesterday I used an old, unopened bag of Bob's Red Mill Semolina Flour that I've had in my pantry forever. I made bread with it using this King Arthur Flour recipe that was easy and delicious.

Searching online for a cheaper source of Semolina flour I read that there is, like cornmeal, both finely ground semolina flour and more coarsely ground semolina. What are the differences and applications? I also read that Cream of Wheat can be substituted for semolina. Is that true? If so, which type of semolina can it replace, the flour or the coarse ground? Also, can I use coarse ground semolina in bread? I read that generic cream of wheat can be found in Indian grocery stores. I have a Patel Brothers in my town. Might they have a cheaper alternative to the Bob's product? Thanks!
