Sei-teen with spinach

The Whole Foods salad bar at Columbus Circle has something called "Sei-teen with Spinach". The Sei-teen is apparently made with soy and water and looks like mini strands of pasta. Does anyone know how this is made and how one can recreate the mixture at home? Thanks!
