Help! I'm trying to recreate my mother's sausage stew, but none of the sausage in my area (the Berkshires) has anything remotely similar to the hard-smoked sausage we used to purchase from Sprecher's at the Reading Farmer's Market. The sausage skin was shriveled and deep brick red/brown. I've never had another sausage that compares to it. Any suggestions would be greatly appreciated.
