Seeking Peking Duck with soft bun

Ever since Dai Hong Lau(sp?) on Mott Street went belly up. I have been seeking a replacement peking duck place in Chinatown that serves fatty duck with crispy skin on SOFT BUNS! Health reasons aside, peking duck (Peking field duck) is supposed to be fatty, they take the fattest ducks from the field, slightly separate the skin from the layer of cellulose BEFORE roasting it so that the duck is juicy but the juice doesnt make the skin soggy. That being said, you cannot eat a juicy, fat filled piece of duck with pancakes that do not absorb the fat, it just creates a big mess. So, please dont post about Peking Duck House or any other restaurants that serve duck on a pancake. Yes, its done in China too, but guess what thats done in restaurants that don't serve their duck plump and juicy like how it should be. Bottom line, fat and juicy and crispy skin that melts in your mouth and a bun that absorbs the juice. Let me know.
