One of this season's farmers market discoveries is Secret Bakery, vending at the Oldtown Salinas market on Saturday morning's or at Flora's Farm in Greenfield on Sundays. The cottage baker works magic with a 36-hour sourdough rise and fresh home-milled flours of locally grown heirloom wheat and whole grains.
Tried so far:
• Sourdough baguette, lightly tangy with a crunchy crust
• Almond croissant filled with frangipane in a twice-baked buttery laminate dough
• Chocolate-cherry rye, deliciously nutty in low gluten frame shot through with bittersweet chocolate and tart cherries
• The Works, braided mini-loaf of croissant dough encrusted with everything bagel seasonings plus pumpkin seeds
Advance orders accepted for Wednesday delivery or Saturday pick-up.
