We had a gas leak in our building and it took a year to fix. Now the gas is back on and I crave opinions on the best way to season my Matfer B carbon skillet, which Amazon shipped to me exactly one day before our gas was shut off for one year. (That's how long it took for Con Ed, the plumbers, the various NYC agencies etc. to come together.)
In the interim we got by with an electric stove, but it's a lousy way to cook and I wouldn't dream of subjecting the Matfer to such humiliation.) Matfer's instructions are pretty standard but I feel certain that the Hounds have come up with more developed and evolved procedures. So . . . now we're cooking with gas and the Matfer awaits.
