Many years ago I had a roommate, who had attended Cordon Bleu. He cooked many fantastic meals. One thing I remember with fondness was a cake, he called it "Birthday Cake" and only made it for special occasions. It had dried currants, dried apricots and orange water in the batter. It was made with cake flour rather than regular flour, and was assembled in two layers with raspberry or apricot jam center. It was topped with a thin sugary icing and shaved almonds. Does this sound familiar to anyone. Unfortunately my friend has been deceased for some years, and his was the only recipe I have seen. This was a very delicate cake, it melted in your mouth, very light but absolutely delicious. I would truly appreciate finding a similar recipe.
