I spent about a month in India in January and I drank a lot of chai (as I'm sure anyone who has been to India has) and ever since, I haven't been able to find a comparable cup. I've tried to make it at home but it doesn't come out right, too watery. The best cup I had in India was at a dhaba on the way from Agra to New Delhi. It was thick and frothy, with a toasty caramely flavor and a mild spicy flavor. Chai in US coffee shops seem to be all about cinnamon and spice, which wasn't a prominent flavor in most of the chai I had while in India and it certainly wasn't prominent in the best cup at that dhaba. Does anyone have an authentic tried-and-true recipe that will get me there? What is their secret?
