It's been a long while since I sampled ceviche at a restaurant; most recently I made a traditional peruvian recipe using grouper. My benchmark was etched by those electrically bright, briny versions I had in Lima, corvina or squid served with giant boiled corn kernels and yucca.
Since the White Center Peruvian El Chalan has closed, I'm just looking for a new source for a relatively affordable bowl, though I look forward to trying the more elaborate Nuevo-Andean cuisine at Mixtura in Kirkland. Any ideas?
On a possibly related note, I've wondered for some time about the offerings at Copacabana, reportedly a Bolivian restaurant in Pike Place. Anyone been lately?
