I just picked up 2 sea bass steaks - about 8 oz apiece and 1 inch thick. I'd like to grill them. Fishmonger said to marinate in an Italian style marinade -- i.e., olive oil, minced garlic, herbs -- which sounds easy, but I forgot to ask for how long to cook. I'm assuming about 8 minutes total, but would love some confirmation. Also, if any one has a simple, alternate preparation for the grill, that would be fine. Thanks.
