Like many a weight-challenged eater, Phila. Cream cheese is one of my fav snacks. When I combine it with Tamari and toasted sesame seeds, it keeps its ______(don't know what to call it.) But when I combine it with Pepper Jelly (ingred: hot capsicum, sweet red peppers, sugar, pectin...)the cream cheese loses its ____ and the mixture gets watery. What elements in the two have a reaction that causes this, anyone? Is the pectin being broken down by something? thx much!
