saving chocolate with blooms

My boxed milk chocolate collection has turned a pale tan after sitting for a while, which I think are called 'blooms'. The chocolate has becomes somewhat brittle as a result as well, and I think it has affected the taste. Is there any way to save it? Would melting the chocolate down and hardening it again bring back the glossy dark color and good taste?
