Saurkraut Polish or German??]

Years ago i remember someone making hot dogs with a brown saurkraut,i asked why it was brown and was told it was cooked in bacon fat,it was very good on the hot dog,a different taste to kraut,has anyone ever made this or eaten this,is there other things to add to this,can someone help me out on how to cook this?
