Looking at purchasing a new Santoku kitchen knife and really like the Wüsthof knives and most of the knives that I own are from the Classic line.
I'm ready to upgrade and am looking at Wüsthof Classic, Classic Icon or even a Global Classic.
I would like to investigate a Shun knife also.
I have read the William's Sonoma, Serious Eats, The Spruce Eats, Epicurious, Tech Gear Lab, Eat Delights and Independent UK reviews.
I thought I'd ask advice from some of the CH Community anyone with any expertise in knives is invited to contribute.
