Santa Fe/Northern NM-themed hors d'oeuvre spread? [Moved from the Southwest Board]

My husband and I eloped to Santa Fe this summer and my parents are hosting a reception for us at their home over the holidays to celebrate our marriage with their friends. We thought it might be fun to bring a taste of Santa Fe to Michigan for the party, so I'm racking my brains trying to think of some creative ways to use traditional Santa Fe/Northern NM ingredients in our spread. Hopefully some of you natives will have ideas for me! Unless I can order things online, we won't have access to certain ingredients (i.e., blue corn tortillas are a no-go), but I'm hoping we can at least recreate the spirit of Santa Fe. We're going for mostly finger foods, and more elegant than casual. Here are some of my ideas:

Mini sopapillas stuffed with red chile-rubbed beef and poblano cream sauce
Guacamole and smoked salmon on a blue corn tortilla chip
Brie in puff pastry with a honey/pinon topping
Phyllo cigars stuffed with carne adovada
Mini-peppers stuffed chile en nogada style
Sweet potato chips with a cranberry-chipotle salsa
Chorizo and refried bean turnovers
Green chile quesadilla wedges
