I'm in need of some sandwich ideas, boring I know! I'm hosting a bridal shower, and we're doing 'classy picnic food'.
I have a great pressed sandwich, with mozzarella, rocket, Italian cold cuts, red pepper aioli, and balsamic. I've made them before, and they are even better the next day.

I'm wanting a second, just for variety, but I'm not having much luck finding another make-ahead one. I've tried a few recipes, and they all end up soggy or slimy.
I like the idea of chicken and pesto on foccacia, but not sure what else to put in there.

It does need to be made the day before, and not be too messy, so chicken salad types don't work.

I always get awesome advice here, so thought I'd ask for ideas!
