Joe H's recent post in Italy regarding a trip from the Dolmites to Salzburg raised a question about restaurants in and around Salzburg.
Restaurant Ikarus at Hangar 7 of the Salzburg airport is by far my most interesting restaurant experience in Salzburg. The glass structure is striking and unique and I prefer to visit in daylight. However, since it has rotating chefs each month it's hard to comment on the food from each without visiting. The last time I visited there was a french chef in attendance and frankly the meal was acceptable but not memorable. The space on the other hand was spectacular. Currently the chef in residence is Marcelo Tejedor an accomplished Spanish chef from Santiago de Compostela, whose Casa Marcelo I've enjoyed in the past. (You may also recognize him from the Jose Andres TV show). I do feel it would be worth stopping this February if possible. Not knowing the future chefs makes it harder to recommend later in the year.
One place I've been meaning to visit is Pfefferschiff in Hallweg just outside of Salzburg.
Friends have highly suggested this place because the chef was trained by Lisl Bacher at Landhaus Bacher, my personal favorite chef in Austria. Her two star kitchen is perhaps more classic than many of the newer popular restaurants like Taubekobel., but it's a simple elegance that highlights the flavors of the food and the seasons over techniques and show. Her cookbook "Jedes Mahl ein Genuss" is great and she also makes the best apricot marmelade (a Wachau specialty) I've ever had. Landhaus Bacher in located on the edge of the Wachau in Mautern, and about 2 hours from Salzburg, so not really a simple side trip, however well worth a special trip especially if one wants to sample the wines of the Wachau.
