I am going to treat myself to some salmon roe for the holidays. I am trying to figure out how much to buy and I am wondering how long it will last under ideal conditions? Also, any tricks or ideas about how to store would be appreciated. At sushi joints I see it housed in plain plastic or glass airtight containers.
My favorite use salmon roe was in a handroll with salmon skin, roe, and cream cheese, and some chervil. (I think) That said, I could eat salmon just with some rice. I think my first use will just be salmon topped with some craime fraiche and roe. Any other ideas?
