In the post about authentic Seattle, some one mentioned Salmon.
I have to admit, while salmon definitely defines Seattle, I've grown a little sick of it.
I've had way too many mediocre grilled salmons and bland baked or stuffed salmons in the recent past, that I almost don't want to have it anymore. I've chosen something else almost every time I've seen it on the menu in the past couple of years. The last great salmon preparation I had was at Rover's a long while ago; it must have been sous-vide cooked, because it was ridiculously soft and tender and flavorful.
But now I'm looking to be inspired again by the Northwest's favorite fish.
Who around Greater Seattle does something special with Salmon?
I'm looking for innovative, or just a truly well executed classic preparation.
Or maybe even the last good salmon you had.
