Salads are my Achilles heel...

As we head into winter and (I hope and pray) the Delta variant becomes less of a threat, I hope to have people over for a meal once in a while. I often serve a heavy one dish main such as Baked Ziti, Chicken Pot Pie, or Beef Stroganoff with noodles along with a hearty dessert such as a fruit crisp with ice cream. But I struggle with finding a salad that is crisp and green but not boring. Can anyone share their favorite green salad recipe for a meal like this? I was about to comb through my cookbooks looking for some ideas, but I think I'll have better luck with the Chowhound crew. Thanks in advance.
