Whilst preparing salad in bulk I notice that the bowls end up really waterlogged.
I'm hoping one of you folks would know any tips for avoiding this.
Here is my ingredients/process:
3 kg chopped (fresh) tomatoes
1.5 kg chopped red onions
2.5 kg drained tinned chickpeas
100g chopped coriander
400ml olive oil
150ml lemon juice
I've been chopping the vegetables and mix the salad together the day before and dressing it on the day with the oil and lemon juice.
I've noticed the container having several pints of juice left over which isn't from the dressing...any thoughts?
