ok I thought I had a brilliant idea, but now its gone astray, can anyone help me resurrect this salad?
I thought I could make some sort of root vegetable salad, so I cubed up all the above ingredients along with diced jalapeno but, now I don't know what to do with it. I don't want to make a mayonnaise-y salad, and I can't add too much liquid because the taro (I steamed it, then cubed it and roasted it in order to hold the shape) will just dissolve in any sort of lemon/vinegar thing.
can I try a mustard-dressing maybe? or does it need greens? any ideas are welcome, as this is probably a weird combination that hasn't been done before. or who am I kidding anyway? what I mean is, it's open to anything. anchovies? peanuts? ooh, maybe avocado. the only constraint is, it's gotta be healthy.
