My husband is not eating too well these days (health problems) so when he finds or thinks of something that appeals to him, I try to indulge him.
Recently we've had a couple meals in different Japanese restaurants here in So. Cal., and they serve a salad which he really likes. It's just iceberg lettuce with this orange-colored dressing. The dressing seems to have very little if any oil, some ginger, and some other stuff -- maybe pureed tofu??? Does anyone know what this stuff is called, and how I can make it or whether I can buy it?
If I can find or make it, maybe I can serve it on spinach leaves to get my husband a little extra nutrition.
