I am trying to educate myself a bit about Japanese cuisine, starting with the basics. Does anyone have a favorite cooking sake? The Mirin that I bought yesterday at Mitsuwa market is OK, but after I got home I realized it has corn syrup in it, not something I like to use. ( I admit I bought this brand because the graphics on the label looked so cool... :-) Should I buy a more expensive bottle of Mirin or is there a better Sweet Sake to use for cooking.
Also if anyone could recommend a good , moderate $, ie $20-40 drinking Sake for beginners palate that would be cool also.
At Mitsuwa I noticed buckwheat flour for making soba, anyone with any experience or link to a good recipe for this??
