Why is the sage bitter?

DaisyM | Nov 6, 2009 12:29 PM

I was just testing a butternut squash recipe which called for sage fried in butter till crispy. Then the sage is added to the squash. When I tasted the sage it was bitter. I just bought it and it look very fresh. Any reason for this? I didn't add it to the squash and I would have liked to. Thank you!
