Rupa Vira's The Signature is an upscale Indian restaurant in the odd location of a business park north of Dulles Airport. Interspersed throught the menu are some interesting Gujarati specialties that are not found elsewhere.
Midweek lunch, they probably have the most thoughtful lunch buffet around. It avoids all of the typical pitfalls of Indian buffets filled with lukewarm unspiced sauces. It is a small but choice selection of mostly snacks with maybe one curry and one rice dish. It is quality over quantity.
From the dinner menu I've found one Gujarati dish that is completely sensational; it is a vegetable stew called undhiyu, in which the pea pods still have a fresh snap to them. This dish is worth going out of your way for. I have yet to find something else that complements it thoroughly, but for future visits I have my eye on the khandvi, a kind of rolled pancake (for lack of a better term), and the deep fried dumpling filled with pigeon peas and green peas called lilva kachori. They also serve a gujarati kadhi. I have tried the kadhi pakora, which is good, simple, and homey pakora soaked in a yogurt gravy.
I am very much looking forward to returning.
