My fiancee and I went to RUB last night with high expectations for the BBQ. I had the Burnt Ends with a 1/4 rack of St. Louis Ribs. She had the Pulled Pork sandwich.
The meat, it should be said, was cooked perfectly. Everything was delicate and "warm", just as BBQ should be. But the flavor was extremely subtle - so subtle as to be somewhat unnoticeable. I always go to BBQ for the powerhouse flavor and this was nothing like it. Even when I added the BBQ sauce on the table, it helped a little, but didn't have any special kick to the palate.
Since the owner is the King Of All Barbecue, it made me wonder if perhaps my understanding of BBQ was off. Is BBQ flavor supposed to be subtle and delicate? If so, maybe "proper" BBQ just isn't for me?
The sides were excellent. I had baked beans (which were amazing!) and onion strings (where were appropriately yummy and greasy). My fiancee had the collard and mustard greens, which were good.
As for the service, the host was very accommodating. Our waiter was nice enough, but a little "in space". It took him 10 minutes to get to our table and twice as long to refill my soda.
Anyway, we're not planning on returning. But I'm particularly curious to know if the BBQ was authentic.
