Rouille de Seiche

Does any francophile or a person from l'Herault know what 'Rouille de Seiche' is ? I had that wonderful seafood dish in white sauce at a restaurant near Montpellier, France. Seiche is cuttle-fish -- not sure why Rouille (rust).
If anyone had this dish in NYC or knows a French Restaurant which specializes in Southern French cuisine, pls let know. Many thanks.
